Low Carb Chili

This recipe is delicious and easy to make, double the recipe so you'll have leftovers!

Ingredients
  

  • 1 lb Ground Beef
  • 1 lb Ground Sausage (spicy or mild)
  • 1 Bell Pepper, diced
  • 1 Onion, diced
  • 3 Cloves of Garlic, minced
  • 1 14.5 oz can of diced tomatoes
  • 5 tbsp tomato paste
  • 2 tbsp chili powder
  • 1 1/2 tsp cumin
  • 1/2 C broth or water
  • 2 tbsp olive oil for cooking
  • Salt & Pepper to taste
  • Optional toppings: cheese, sour cream, avocado

Instructions
 

  • In a large pot or frying pan, heat 1 tbsp oil and brown beef and sausage. Drain the meat, leaving a small amount of juices. Transfer meat and sauces to slow cooker.
    Add remaining tbsp of  oil to the pan, and sauté onion, pepper, and garlic for 2-3 minutes. Transfer veggies to slow cooker with meats.
    Add the tomatoes with their juices, tomato paste, chili, cumin, salt and pepper, and water or broth. Mix well. 
    Place lid on the slow cooker and cook on low for 6-8 hours or on high for 4 hours. Serve with desired toppings.
